The humble spud …

the holidays are over and winter is here.

We need comfort and warmth at this time of year and so I give you recipes for the humble spud.

From the practical, weekday meals to a treat at the weekend!

Take 5 minutes out of your day, turn on the oven and fill every inch ...


Bake half a dozen jacket potatoes – they don't take up too much space if, for example, you're cooking a roast. Prick them and wrap in foil – bake for an hour – check – depending on the size they make take a little longer. Set them aside to cool and then bag and fridge.


Your filling can be anything you like - salmon, tuna or chicken. There are loads of veggie options too. You could scoop out the potato – be careful of your fingers – add cheese and pop back.

Here's an idea :


Asian Spiced Salmon


Marinade


2 x 4oz Salmon fillets

2 garlic cloves, crushed

1 tsp powdered star anise or one star anise

1 tbsp dark soy sauce


Mix together the marinade, pour over the salmon fillets, turning to coat thoroughly, cover and leave in fridge for an hour or so.

When you are ready to cook, pre-heat your oven 160fan/180c/Gas 4 and cook for 15 minutes.

It's equally good hot or cold!

Spiced Salmon Frittata … another treat

If you want something different, with bags of flavour thrown in, try this variation on a theme!

You can marinade and bake the salmon ahead, ready to roll when you are.


Spiced Salmon Frittata

Serves 4


For the spiced salmon marinade :

Marinade


2 x 4oz Salmon fillets

2 garlic cloves, crushed

1 tsp powdered star anise or one star anise

1 tbsp dark soy sauce


Mix together the marinade, pour over the salmon fillets, turning to coat thoroughly, cover and leave in fridge for an hour or so – preferably in a foil tray – much easier to transfer straight to the oven later.

Pre-heat your oven 180fan/200c/Gas 6. If you've used a foil tray to marinade the salmon then wrap it in foil and bake it for 10 minutes. Remove and set aside to cool. When the salmon has cooled flake it into small pieces, ready to add to the frittata.


For the frittata :

1 large cooked baked potato – peeled if

you prefer – cut into small pieces

5 spring onions, finely chopped

tiny drop of rapeseed oil

100g/4oz mature cheddar cheese, grated from your stash

4 large eggs

salt and black pepper


Whisk four eggs in a large mixing bowl, add the cheese and whisk again. Add a touch of salt and plenty of black pepper.

Sauté the potato and onions until softened then sprinkle in your flaked salmon, add the egg and cheese mixture.

Follow the frittata method to complete the dish. You could drizzle the residual marinade from the salmon over the the top of the cooked frittata.


Method


Using a non-stick frying pan – as a guide 28cms/11” in diameter. Heat a tiny drop of rapeseed oil, add the chicken, roast potatoes and veggies - sauté until softened, then pour in the egg and cheese mixture. Cook on your hob for 2/3 minutes to set the bottom. Transfer the pan to the grill - cook for 2/3 minutes REMOVE USING OVEN GLOVES – SEE WARNING!


Words of Warning!

Pre-heat your grill – BEFORE YOU TURN IT ON ENSURE THAT THE FRYING PAN YOU'RE USING WILL SLIDE EASILY INTO THE SPACE LEAVING AT LEAST TWO INCHES GAP BETWEEN THE PAN AND THE GRILL ITSELF, OTHERWISE YOU'LL BURN THE TOP AND THE MIDDLE WON'T BE COOKED.


Using a fish slice gently flatten down the frittata so that you break the top – you may find that the

mixture is still not quite cooked. Place back under the grill for another 2/3 minutes and check – it should be golden brown but if your preference is for a darker colour carry on to your desired

taste.


Minimum effort – maximum taste.

Here's a thought - you could use this recipe for a canapé!

I used a straight sided cutter measuring 6cms/2½” in diameter and you should get 12-14 canapés depending on how careful you are cutting out. A frittata is excellent served cold in whatever guise - so easy … so tasty – who needs a pre-packaged recipe box!

Posh Frittata - a treat …

A frittata always hits the spot – here's a posher version!

I had the usual suspects - leftover roasties – never wasted – and eggs, mature Cheddar cheese and a bunch of spring onions. The treat – smoked salmon.


Smoked Salmon Frittata


Serves 4


You'll need a large frying pan


240g roasties, cut into small pieces – plus

any crispy bits too!

1 bunch of spring onions, finely chopped

3 large eggs, beaten

2 handfuls of grated mature Cheddar cheese -

as a guide a handful weighs 75g approximately

100g packet of smoked salmon, snipped into

small pieces

a drop of rapeseed oil

black pepper


Heat a drop of rapeseed oil in your frying pan. Add the roasties and the spring onions and sauté for 3-4 minutes. Add the snipped pieces of smoked salmon and fold into the roasties and onions, sauté for 2 minutes.


Pre-heat your grill – BEFORE YOU TURN IT ON

ENSURE THAT THE FRYING PAN YOU'RE USING

WILL SLIDE EASILY INTO THE SPACE LEAVING AT

LEAST TWO INCHES GAP BETWEEN THE PAN AND

THE GRILL ITSELF, OTHERWISE YOU'LL BURN

Add the grated cheese to the beaten eggs to the roasties, onions and smoked salmon and cook on a medium heat on the hob for 2/3 minutes. Transfer the pan to the grill - cook for 2/3 minutes Remove the pan from the grill - USING OVEN GLOVES.

Place back under the grill for another 2/3 minutes and check – it should be golden brown but if your preference is for a darker colour carry on to your desired taste.


Serve on warmed plates – with any of the sides mentioned in the previous recipe.

The middle of the week …

If you want a supper for the middle of the week and you haven't got the Sunday leftovers can I remind you about a post I made last August – Rocket Science and light bulbs! I suggested that you could deliberately cook more than you'll use thereby creating a stash in your fridge. If your oven is turned on then fill it, wrap six large baking potatoes in foil and bake. Grate cheddar cheese, box it and fridge. It's the perfect solution for mid-week meals – both for economy and speed.

Editor's April Pick #8: Asian Spiced Salmon

Editor's note: I am extremely privileged and honoured to have sampled this recipe, and do brag about that given the chance - for those who aren't so lucky I implore you to try the Asian spiced salmon. Now more than ever, the post title rings true as some of us in limbo - "Mostly working from home" - to  "Why was I dragged into an office, it could have been an email" - this is a fantastic, tasty and above all fast idea for an evening meal!


Fast food for the working week …

Here are three ideas for your protein choice. First is a recipe I've used gazillions of times – it's just as good hot or cold.


Asian Spiced Salmon

Serves 2


2 x 4oz Salmon fillets

2 garlic cloves, crushed

1 tsp powdered star anise or one star anise

1 tbsp dark soy sauce


Mix together the marinade and - using an ovenproof dish – pour it over the salmon fillets, turning to coat thoroughly, cover and leave in fridge for an hour or so.

Bake in a pre-heated oven 160fan/180c/Gas 4 for 15 minutes.

If you're using whole star anise then remove before serving. The salmon has a charred look when cooked which is aromatic and delicious with the raw slaw and particularly with the pomegranate dressing.

For a chicken option :


Miso Maple Glazed Chicken

Serves 4


4 chicken breasts

1 tbsp baking powder*

4 fl oz/½ cup maple syrup*

2 fl oz/¼ cup white miso paste*


Mix * together, add the chicken breasts and

marinate for 24 hrs


Sprinkle with chopped spring onions


Bake in a pre-heated oven 180 fan/200c/Gas 6

for 35 minutes


Takes no time at all and, if you marinate the chicken in a foil tray, it can go straight from the fridge, into the oven – no washing up!

Now for the vegetarian option – that old faithful halloumi – cubed, coated in a seasoning and sealed in a drop of rapeseed oil in a non-stick frying pan. I know I've mentioned this recipe recently but it is excellent and tasty with the slaw together with a dressing of your choice!


250g Halloumi cheese

50g plain flour

1 tbsp seasoning of your choice

Definitely food for thought!

Editor’s December Pick #5: Here’s what I mean by resourceful and creative

Editor's note: I’ve been craving some flavour lately after a fair few cold evening meals of soups and the like and this recipe is just the ticket. Spiced Salmon is a tried and tested favourite of MiamMiam and just the ticket for a little something different. It's recipes like this that inspire the most – I would never have put salmon in a frittata without reading it here, but you won’t look at a plain cheese omelette the same again!


Here's what I mean …


by resourceful and creative – a canapé that can turn into a lunch or a supper.


Spiced Salmon Frittata

Don't forget to salmon fillets to your freezer shopping list. There are good deals out there – usually individually packaged – in bags of six. You can pull out whatever you need. The bonus is that they don't take up too much space in the freezer.

The baked potato … and whilst I'm at it

Now I can show you how taking 5 minutes out of your day can produce a meal!

To recall …


If you have turned on the oven, fill it

Bake half a dozen jacket potatoes – they don't take up too much space if, for example, you're cooking a roast. Prick them and wrap in foil – bake for an hour – check – depending on the size they make take a little longer. Set them aside to cool and then bag and fridge.


This has got to be the quickest meal … you've prepped the coleslaw and all you have to do is add a dressing of choice. The jacket potatoes are cooked and so all that remains is for them to be zapped in the microwave and whilst that's happening you can unwrap the ham hock – hey presto!

It doesn't have to be ham hock, it can be anything you like salmon, tuna or chicken. There are loads of veggie options too.

You could scoop out the potato – be careful of your fingers – add cheese and pop back.

Here's another idea if you don't like ham hock :

Another weekend breakfast treat …

 or brunch if you prefer, with add-ons – a frittata hits the spot.

My next suggest is a combination of leftovers, staples and a treat.

I had leftover roasties – never wasted! I had the usual suspects – eggs and mature Cheddar cheese and a bunch of spring onions. The treat – smoked salmon.

Serves 4
