Crostini spreads – to buy ready-made or not …

...that is the question!

Do whatever suits you – there are some great quality tapenade and pesto products out there. If you're going to use ready-made buy as good a quality as you can afford.

If you'd like to give it a try, here are recipes for both :


Tapenade


100g black olives, pitted

4/5 cloves of garlic (or equivalent tsps of paste)

1 tbsp of extra virgin olive oil

black pepper

lemon juice – try a dessert spoon – you can always add more

4 finely chopped anchovies, drained

75g chopped capers


Blitz the olives, then add the garlic, capers and anchovies and blitz again, briefly – you want a rustic paste, not mush. Tip into a bowl and add the oil, lemon juice and black pepper to taste – remember to taste as you go you can't take it back!

Pesto is vibrantly green! It's made from crushed basil leaves, toasted pine nuts, garlic, Parmesan and olive oil.

The following recipe serves 4, is easy and takes 10 minutes to make.


Pesto


1 small garlic clove or equivalent roasted

pinch of sea salt

25g pine nuts, lightly toasted

50g fresh basil leaves

juice of half a lemon

125ml extra virgin olive oil


Use a small food processor. Put the garlic and salt in the bowl and pulse, then add the pine nuts and repeat until roughly chopped – don't overwork. Add the basil and pulse gently until well mixed but still retains texture. Turn into a serving bowl and add the Parmesan and lemon juice. Pour in the olive oil and mix to a paste. Season to taste.

You could make the pesto ahead and transfer to a jar with a tight lid (sterilised of course) – drizzle a layer of olive oil over the top of the pesto. It will keep in the fridge for up to a week.


If I had to choose one to make from scratch it would be tapenade every time – it really is scrumptious.

Tomato paste is a bit strong for my taste - if it's not cooked it has a bitter taste but preparing some of each will cater for everyone. A tip – a thin scrape of paste is all that's required!

One might say the crostini is fiddly, but, almost all of it can be done in advance and you can take short cuts for example, you can buy sliced pitted olives, ready to blitz after draining.

Gallimaufry - Hints & Tips

First up, the potatoes. You'll notice that the recipe calls for red new potatoes. Have a look for “Albert Bartlett Apache potatoes – great for roasting or mashing in their skins”. I've found them in 600g bags. The majority of the larger supermarkets carry more varieties these days - another example is Ruby Gem.

Next the tapenade. You can do whatever is more practical – I always have a jar of black olive tapenade in my store cupboard and my favourite is M&S Black Olive Tapenade – it also has an excellent best before date. If you're feeling adventurous have a go at making your own. It's easy.


Coarse Tapenade


1 tbsp drained capers

85g pitted olives

1 tbsp olive oil

Two anchovies, chopped finely

1 roasted garlic clove

1 dessert spoon of lemon juice


Blitz all the ingredients. The trick is to stop pulverising whilst the mixture is coarse – it gives texture to the dish and not mush.

Then there's the stock. You can thicken it if you wish – as it is it's more of a broth. If you are a “gravy” person and prefer a little more substance then mix 1 tsp of cornflour with a drop or two of water and add gradually to the stock as you're warming it through. Note to self – don't be tempted to add anything else – whether to the stock or to the gravy – your stock is already infused with garlic and oregano, not for nothing do I call it liquid gold.

Finally – you still have two chicken legs, wings etc., leftover from the slow cooking. Strip the legs and wings of meat, bag and freeze – don't forget to mark the bag.

Use the chicken in cooked pasta with Alfredo Sauce or as part of a mid week frittata or last but by no means least you have your protein element for your chicken salad wrap – with mango or raita dressing for lunch the next day – there will probably be enough chicken for two wraps – just in case you're feeling generous.

If you have time then tip the remaining chicken bits into a large saucepan, cover with water – bring to the boil and simmer for 20-30 minutes strain and boom – chicken stock. Freeze it in small amounts – you'll be pleased you did. If you are short of time then bag the remains and freeze it for making stock for soup whenever the mood takes.

No greenery!

For those who are anti salad because of the greenery here's a “salad” for you. No greenery – I should clarify that the parsley in the recipe I class as a garnish and technically not greenery – if you're really anti then you can always leave the parsley out but you might want to break the habits of a lifetime and try it.


Potato and Olive Salad


Serves 4/6


500g new potatoes

3tbsp extra virgin olive oil

juice of ½ lemon

½ tsp paprika

½ tsp ground cumin

pinch of chilli pepper

salt

bunch of flat leaf parsley chopped

medium mild red or white onion, chopped finely

12 black olives


Peel the potatoes and boil them in salted water until tender. Drain and cut in half – quarters if large, leave whole if small.

Mix the oil with the lemon juice, paprika, cumin, chilli and salt.

While still warm turn the potatoes in the dressing, add the parsley, onion and olives and mix gently.


Why not tweak this recipe if you're a fan of meat. Fry 200g of diced chorizo and use the delicious oil from it as part of your dressing adding an extra dimension and I think a worthwhile candidate for a sharing plate shabang.

Why not serve it warm instead?!

Save time and money – Part 6

Speaking of Christmas Eve – and whilst we're on the subject - here's another idea.

Did you ever wonder what to do with that jar of preserved lemons and black olives? This recipe is a Middle Eastern “hat tipping” to the wonderful tagine, cooked in stages for convenience. You could slow cook the dish altogether if that's better for you so – Plan A or Plan B!


Chicken and Preserved Lemon Tagine


Serves 4


2 tbsp of olive oil – or rapeseed

125g diced chorizo - 225g

1 medium onion, peeled and finely chopped

sweet baby peppers, de-seeded and finely sliced

30ml – 2tbsp preserved lemons – rinsed and

chopped

400g passata

60ml medium white wine

500ml chicken stock

black olives – pitted – 150g drained weight - 350g

2 cloves of roasted garlic or 2 cloves

peeled and finely chopped

15ml sweet paprika

salt and black pepper


4 medium chicken breasts


Plan A


Heat the olive oil in a large frying pan and gently fry the garlic paste, onion and paprika until soft – 10 minutes. Add the chorizo and fry until crispy. Add the wine and simmer until reduced – 5 minutes. Add the passata, stock and slow cooked chicken breasts and simmer gently, lid off, for about 20 minutes.

Add the olives and preserved lemons and season well – taste and adjust!

I'd slow cook the chicken breasts the day before required, using the 500ml of chicken stock in the recipe and then set them aside to cool, box and fridge. You can make the “sauce” when it suits you too. Complete your “tagine” adding the chicken breasts to the sauce and finish off as above, heating through gently on the stove.


Plan B

You could slow cook this recipe all together, completing the dish with the olives and preserved lemons either as you're re-heating or for the last 10 minutes of cooking time if serving straight from the slow cooker. If you're using this method then I'd slow cook for three hours. If you prefer your chorizo crispy I'd leave the chorizo until the last 20 minutes of slow cooking time then fry until crispy and add, with the oil, to your tagine, together with the preserved lemons and olives.

If you'd like a veggie version, use Quorn fillets.

What to serve with?

Keep it simple - new potatoes – boiled or steamed and or even roasted in their skins. Mange tout – sliced lengthways and stir fried.

Yum – now back to the cheap & cheerful!
