Save time and money – Part 4

or you could try a posh Shepherd's Pie Upside Down.


SPUD

(Shepherd's Pie Upside Down)

Serves 4-6


940g braising steak – 1kg will do it doesn't

have to be precise


980g beef stock - ditto


Glug of rapeseed oil


salt and pepper


2 x beef stock pots


salt and black pepper


I zoomed to the butchers and bought 3 x trays of cubed braising steak for £10. A good start! A little patience is required here – using a large frying pan heat the rapeseed oil, place braising steak in the pan – it should sizzle – season with salt and pepper. Don't overload the pan, brown the meat and then set aside in your slow cooker making way for the next batch and repeat until you've browned all the meat. If you insist in ramming it all into the pan it will turn grey and stew – it's not a good look.

Add a litre of water to the juices left in the frying pan, bring to the boil then add the stock pots – stir until melted – pour carefully into the slow cooker with the meat. Pop the lid on and slow cook for four hours.

Switch off and cool – if you want to freeze all or part then divide the stock between two “pour and store” freezer bags and divide the meat between two in strong freezer bags.


Other than the slow cooking of the braising steak there's no work involved - the mash and turning the stock into a gravy beyond all gravies is easy, peasy, just thicken the stock as required with 1-2 teaspoons of slaked cornflour.

All that remains is the mashed potatoes – a large pan! Leftover mash is perfect for bubble & squeak or corned beef hash.



Was it worth the fifteen minutes I spent prepping the braising steak for the slow cooker … you betcha!

P.s. You might want to offer your guests a spoon too, to scoop up the leftover gravy. In the North we have a less refined custom but much more satisfying – use small pieces of crusty bread to dip and mop up the remains.

Chapter VII – Economy Drive … a batch of burgers

It's Friday evening … and I'd like to point out the obvious – you're exhausted. The ideal solution is to take the burgers from your treasure chest that you made when you had 15 minutes to spare earlier in the week – genius. All you have to do is remember - best leave yourself a note to take them out the night before and fridge!

If you prefer burgers to meatballs then this is the recipe for you – it's the same recipe as I used for the meatballs – versatility is the key.

Burgers

Makes 5 x 100g/4oz burgers


500g minced beef

or Quorn mince


*salt and black pepper

*garlic – either 2 tsps of paste or 2 cloves, crushed

*mixed herbs or garlic italian seasoning – a generous sprinkle

*half a tsp of chilli or smoked paprika

*heaped tbsp of tomato paste

*1 egg


sprinkle of plain flour plus extra to flour

a tray for shaping the burgers

gloves or damp hands!

Rapeseed or vegetable oil for shallow frying



Place the mince in a large mixing bowl then add the remaining ingredients marked *, mix well. At this point your mixture may be too wet. If it is, sprinkle a little plain flour over the mixture and fold in gently.

The easiest way of making uniform burgers is to weigh whatever amount you wish – in this case 100g/4 oz and then shape using gloves or damp hands. The least messy way is to place an amount of minced beef onto a sheet of cling film and add or subtract to the correct weight required. You can then use the cling film to bring the burger into a ball and then transfer to the floured tray, pat it down and form into a circle. Heat the oil gently and seal the burgers on both sides.

At this point you have a choice, you can continue to cook the burgers in the pan on a low heat turning regularly for 15 minutes and then serve or if you're cooking ahead, cool, cover and fridge in an oven-proof dish and pop into a pre-heated oven on 170fan/190c/Gas 5 for 20 minutes when required.


It's up to you what you do


The burgers don't take long to prep and seal, ready to freeze or to cook and serve immediately. If you are freezing a batch seal them in the pan then transfer onto sheets of kitchen roll to cool then bag and freeze as you wish – they are an excellent addition to your treasure chest!



Serve with whatever floats your boat – in a brioche bun, lightly toasted, with a cheese slice, loaded with avocado, onion, slaw and/or mayo and loads of salady stuff on the side.

Hmm, or is it Steak Haché?

Steak Haché, as you may have gathered is French – it's a posh burger without the bun and uses high quality ground beef - as fresh as you can get. I used Aberdeen Angus 5% fat minced steak for my burgers and was delighted with the result. If you're serving to people who say they don't like burgers then call it steak haché and they'll never know!

I digress - back to your cooking stash and the jacket potatoes and grated cheese. Slicing cooked jacket potatoes into wedge shapes and placing on a baking sheet and then sprinkling with grated cheese isn't too taxing.

Your burgers and your wedges need 20 minutes although if you like your wedges crispier then pop them in for 10 minutes and then add the burgers for 20 – don't forget to set your timer. You can reduce the cooking time if you like your burger/haché medium – it depends on the size of burger. As a guide if you pan fry for 3-4 minutes each side you'll get slightly pink.

Whilst you're waiting slice an onion – a sweet variety or Spanish is good too, slice a beef tomato and place on top of the onion and add a generous drizzle of Balsamic glaze – salt and black pepper to suit.

Editor's July Pick #4: The Cornish Pasty – the golden rules

Editor's note: Much like the photo guides being an invaluable addition, the hints and tips are also mega handy. I often forget that other people have different tastes, and had never considered the difference between meat and non-meat versions so it is really thoughtful to have these posts and remind myself there's a lot I don't consider! As a bonus, I have included the finished product to whet your appetite! 


The Cornish Pasty – the golden rules

This series may seem a tad long winded but these culinary masterpieces should not be rushed!

The filling is always raw and is baked at the same time as the pastry. The pasty is a meal in itself and in Cornwall it's actually considered an insult to serve them with anything else.

The meat content should be diced, never minced. The beef should be either chuck steak or skirt – also known as blade. A pasty should contain 12.5% beef. The vegetables should be finely sliced of a similar size so they cook evenly and the potatoes should be an “old variety” which will “fall”. Use strong plain flour – the sort used in bread making. As you can see, this is not an expensive meal – at it's roots the pasty evolved from humble ingredients that were plentiful and nutritious. The meat element was the most costly which is probably why the percentage of meat is as small as it is.

Think of the pasty as a pressure cooker – you need to release steam – place a small hole in the top of the pasty. Don't be tempted to tuck into your pasty straight from the oven – trust me – the inside stays hot for a long time.

Pasties are usually personalised with initials – top left, others say top right – who knows! It does however date back I think to the miners when some owners provided large ovens at the surface to keep the pasties hot for the men. A useful tip for today if you're tweaking the filling to suit your family and friends' preferences!

Something salady

What's your opinion on salad? For people of a certain age the word “salad” is the stuff of nightmares and conjures up visions of limp lettuce leaves, a slice of boiled egg, ditto tomato and a spring onion – oh and if you're lucky salad cream too.

I have decided to make a salad more interesting – so here's a take on warm salads. I know that's a contradiction since salad is meant to be cold – rules are made to be broken. Henceforth my warm salad is a “gallimaufry” - meaning jumble or a medley if you prefer!



Chicken Gallimaufry

Serves 2


2 chicken breasts, sliced at an angle

(from slow cooking a whole chicken)


2 tbsp rapeseed oil

350g red new potatoes, halved or quartered

should be 2cm ish.

Half a lemon cut in half

135g baby leeks, topped, tailed and cut into 1.5cm pieces

1 tbsp tapenade - 15ml

110g fine asparagus

Salt and pepper

Chopped flat leaf parsley to garnish




Pre-heat oven 200fan/220c/Gas 7.

Put the potatoes and lemon wedges into the foil tray you set aside after the slow cooking (or a medium roasting tin if you prefer) and toss with 1 tbsp of oil, season and roast for 20 minutes.

Turn down the oven to 180fan/200c/Gas 6.

Snap the asparagus to remove the woody ends – they should be of a similar size - then blanch, plunge into ice cold water and pat dry. You can prep ahead if you wish, then box and fridge.

Toss the leeks in the remaining tbsp of oil and add to the potatoes. Add the tapenade and fold through. Bake for 10 minutes then add the blanched asparagus for 5 minutes, fold in gently.

Whilst the potatoes et al are baking warm the stock – you should get 250ml from your chicken after straining. (This recipe is based on a slow cooked whole chicken).

To assemble, divide the potatoes, leeks and asparagus between two large bowls – plates will do. Top with the sliced chicken breast – one breast per serving - and add a liberal drizzle of the stock. A sprinkle of parsley to garnish and a wedge of lemon too.

It matters not whether it's broth, gravy, jus, or sauce – so long as it takes good – it's whatever floats your gravy boat – that is beyond bad – I apologise.


Gallimaufry – Hints and Tips


First up, the potatoes. You'll notice that the recipe calls for red new potatoes. Have a look for “Albert Bartlett Apache potatoes – great for roasting or mashing in their skins”. I've found them in 600g bags. The majority of the larger supermarkets carry more varieties these days - another example is Ruby Gem, found at Waitrose.

Next the tapenade. You can do whatever is more practical – I always have a jar of black olive tapenade in my store cupboard and my favourite is M&S Black Olive Tapenade – it also has an excellent best before date. If you're feeling adventurous have a go at making your own. It's easy.


Coarse Tapenade


1 tbsp drained capers

85g pitted olives

1 tbsp olive oil

Two anchovies, chopped finely

1 roasted garlic clove

1 dessert spoon of lemon juice


Blitz all the ingredients. The trick is to stop pulverising whilst the mixture is coarse – it gives texture to the dish and not mush.

Then there's the stock. You can thicken it if you wish – as it is it's more of a broth. If you are a “gravy” person and prefer a little more substance then mix 1 tsp of cornflour with a drop or two of water and add gradually to the stock as you're warming it through. Note to self – don't be tempted to add anything else – whether to the stock or to the gravy – your stock is already infused with garlic and oregano, not for nothing do I call it liquid gold.

Here's another idea. This recipe makes me think of the perfect supper for a duvet/box set day. How romantic to make one huge plate to share … I'll leave that with you.

Finally – you still have two chicken legs, wings etc., leftover from the slow cooking. Strip the legs and wings of meat, bag and freeze – don't forget to mark the bag. Use the chicken in cooked pasta with Alfredo Sauce or as part of a mid week frittata or last but by no means least you have your protein element for your chicken salad wrap – with mango or raita dressing for lunch the next day – there will probably be enough chicken for two wraps – just in case you're feeling generous. If you have time then tip the remaining chicken bits into a large saucepan, cover with water – bring to the boil and simmer for 20-30 minutes strain and boom – chicken stock. Freeze it in small amounts – you'll be pleased you did. If you are short of time then bag the remains and freeze it for making stock for soup whenever the mood takes.

It's another gallimaufry –


Asian Spiced Gallimaufry

Serves 2


The marinade


2 x 4oz fillet steak, sliced thinly

110 – 120g in grams (*see note below)

2 roasted garlic cloves

1 tsp powdered star anise or one whole star anise

1 tbsp dark soy sauce


Mix together the marinade and pour over the fillet slices, ensuring that the slices are thoroughly coated. Box and leave in the fridge for an hour or so – it won't hurt to leave it longer.


The stir fry sauce


1 tbsp dark soy sauce

1 tbsp Chinese rice wine (dry sherry will do)

1 dessert spoon of sweet chill sauce

mix together – can be made ahead, covered and fridged


Ahead of the game


Choose vegetables that are in season and that you love. I chose :


Cooked Jersey Royal potatoes – 500g

quartered

100g asparagus, blanched, plunged into ice

cold water, pat dry, box and fridge

100g baby broad beans – blanched and popped – box and fridge

100g small sweet mini peppers, finely sliced – bag and fridge

100g (2 large) salad onions, finely sliced - ditto


The amounts given are not set in stone – they are a guide to help you - build your own recipe.

*A note about weights – an ounce is exactly 28g but is usually written as either 25 or 30 – whichever suits you best but stick to what you decide – don't confuse yourself!

When you're ready to cook it will take minutes. Don't forget to pre-heat your oven on low to warm the bowls.


Plan of action


Heat 2 tbsp of rapeseed oil in a pre-heated wok or large frying pan. I used a wok. Seal the fillet slices on either side quickly and then set aside – don't overcrowd – cook in batches. Add the onion and sweet peppers to the wok and stir fry for 2/3 minutes, then add the cooked potatoes, stir fry again for 2/3 minutes. Add the broad beans, asparagus and sealed, sliced fillet along with any residual juices. Finally add the stir fry sauce of dark soy, rice wine and sweet chilli sauce. Toss to stir fry for another 3 minutes.

Serve immediately in warmed bowls.

I'd rather eat my own boot than a tomato on a normal day but on that plate with the rest of the food, well I'd absolutely throw caution to the wind and give them another try! Lest I be reminded I'm not completely averse to cherries these days..

Editor's April Pick #2: Comfort Photos

Editor's note: Let's  stop for a moment and take in these photos of the aforementioned recipes. If the photos of the dumplings = both single serve and party size - don't whet the appetite then you've either just eaten or you need to scroll again. Hearty food that definitely benefits stretchier pants being worn!

Here's another thought – if you have dinner guests who have hearty appetites you could transfer a portion of the Alfredo with a Parmesan dumpling into a individual pot complete with lid – serve as a starter but bear in mind your main should balance.

Trust me if you want comfort food look no further but a word of warning – these comfort food ideas are not for the calorie conscious nor meant for everyday more healthy eating. Perfect however for a weekend treat and hey rules are meant to be broken!


Editor's April Pick #1: Stew and Parmesan dumplings

Editor's note: This selection is coincidentally from around Easter a couple of years back and once again I am fully in favour of mixing two of the best things to happen to cooking - cheese, and dumplings. For the meat-eaters too it's worth having a read since shin beef is enjoying a resurgence -  it's two for the price of one - tender beef and fantastic dumplings!


Stew and Dumplings …

actually it's slow cooked shin beef steaks with Parmesan dumplings.

Shin beef used to be considered an old fashioned cut of meat – it has become more fashionable of late. It is perfect for slow cooking – it has connective tissue which is broken down over a long cooking time resulting in tender meat, full of flavour.

The weather is messing with everyone at the moment – Easter has just been and gone and it hasn't exactly been kind - we are still walking round wearing sweaters and two pairs of socks and so not in the mood to surrender our comfort food yet awhile.

I hope, in the nicest way, that what follows is my last “comfort” recipe for some while :


Steak, Gravy and Parmesan Dumplings


Serves 4


1kg shin beef – cut into thick steaks

glug of rapeseed oil

2 cloves of roasted garlic

500g Passata

1 tbsp tomato paste

2tsps soft light brown sugar

2 tbsps soy sauce

250ml red wine – I used Chianti

300ml water

2 beef stock pots

salt and black pepper


Using a large frying pan heat the rapeseed oil and seal the steaks on both sides, seasoning with salt and black pepper. Set the steaks aside in the slow cooker.

Add the garlic, tomato paste, sugar, soy and stock pots and fry gently so that the tomato paste is cooked out and the stock pots melted combining all the ingredients. Add the red wine and bring to the boil then reduce to a simmer, add the water and the passata bring back to the boil then tip over the steaks in the slow cooker. Cook for 4-6 hours on low.

You don't have to do anything with the steak and gravy, if you leave it overnight – covered of course - in a cool place all that will happen is that the flavours have time to develop and it'll taste even better.

The perfect supper to make ahead.

Two for the price of one …

the dumplings to go with the steak and gravy, or

... a recipe for a veggie bowlful requiring only a spoon and a boxed set!

Either way ideal if you're in the mood to put your feet up and relax. I love minimum effort that gives maximum deliciousness.

Here's the dumpling recipe :

Parmesan Dumplings


In a large bowl, mix together

100g (4oz) self raising flour

50g (2oz) vegetarian suet

pinch of salt

15g grated Parmesan cheese


add 5 tbsps of ice cold water – 100ml approx

enough to give a

firm but pliable dough. Divide into 8 dumplings – 6 if

you'd like big ones!


30g grated Parmesan cheese to garnish


Pre-heat oven 180fan/200c/Gas 6.

Add the dumplings to the steak and gravy and sprinkle the 30g of parmesan cheese over the dumplings and cook for 30 minutes.

Serve in a warmed bowl. For extra decadence if you've got leftover mashed potato in the fridge, warm it through place in warmed bowl, place steak on top with a generous helping of gravy, add a dumpling – or even two.

You can cater for the veggies too.


Baked Mushrooms in Alfredo Sauce

Serves 2


500g chestnut or portabellini mushrooms -

quartered


Place the mushrooms on a baking tray that has sides and bake in a pre-heated oven 180fan/200c/Gas 6 for 10 minutes so that the mushrooms release their liquor – drain and set aside.

Place the mushrooms in a small casserole dish measuring 7x24x5 cms ish. Pour over a batch of Alfredo Sauce – see “The hot idea” for the recipe. Place the dumplings into the mushrooms and sauce. Sprnkle with the remaining Parmesan, cover with large pieces of pleated foil and bake in a pre-heated oven as before, for 30 minutes and piping hot.

Editor's February Pick #15: Saturday Night Supper - Shepherd or Cottage?

Editor's note:  Lately I've been using a lot of Quorn mince in the kitchen as it's perfect for CBA cooking - freezer to the pan and you're halfway there - one of the best bits is that the majority of recipes meant for real deal mince translate perfectly. So for this selection I (re!)present one of the Grumpy Old Men recipes - a Snug Shepherd or a Cosy Cottage. Take your pick, or go for a meat-free option, the real gold for me personally is the 'extras' that accompany the base. By the way, don't forget to check out the 'GOM' label for more travel writings and recipes!


Saturday night supper


For the GOM, in front of the football (soccer USA)

Depending on what you fancy, the following is either a “Snug Shepherd” or a “Cosy Cottage” – minced lamb for the shepherd and minced beef for the cottage – pie that is!


A Shepherd or a Cottage


700g minced lamb or beef

1 tbsp rapeseed oil (Canola USA)

2 tbsps Madeira

2 tbsps Ruby Port

2 tsps Worcestershire Sauce

2 tbsps tomato paste

2 lamb or beef stock pots

50-100 ml water


Using a large frying pan and preferably one that is suitable for transfer to the oven. Heat the oil and then add the mince and brown, turning until thoroughly browned. Add the Madeira and the Port and bring to the boil for 2/3 minutes. Add the tomato paste and the stock pots and mix well until absorbed and melted.

Your filling should not be too dry but not too wet either. You should be able to see tiny puddles of liquid. If you need to add water then add it gradually – you can add more you can't remove it!

It's difficult to predict how much fat there'll be in minced meat. Lamb, generally speaking, will have more than beef.

You can transfer the filling into a foil tray or, as I did, leave it in the frying pan.

As a guide, my frying pan that is suitable for hob and oven is 28cms in diameter – 3 very large appetites or 4 normal.

I feel the need to describe the “puddles” :



See them glistening – not too wet but definitely not too dry.

Next - to mash or not to mash, this is the question!

Editor's December Pick - Posh Chilli

Editor's note: Everyone I know has a go-to recipe for chilli. It's such a staple that whatever your chosen method - packet, from scratch, ready meal - you get stuck in a rut with it and can make it in your sleep. Same meat, same veg, same "secret" (I can't be the only one that uses Worcestershire sauce, but some apparently use chocolate or .. coffee?!). You get a bit desensitized to the process and to the taste when you've made it so often in the same way. Now is a fantastic time to forget what you usually do, follow along with this recipe and rediscover why it's such a well-loved meal.


December thoughts – and what's forgotten


We're so focused on the day that just when you thought it was safe … there are the days leading up to and those in-between too.

Here's a dish that will suit either of the above and it uses your favourite friend – the slow cooker.

Make a chilli but not any old chilli - when I think of chilli I think of minced beef. Another confession – I hate minced beef. What makes this chilli special, nay posh, is it uses diced steak and slow cooks it. The only remaining task is to add the red kidney beans and any garnishes. A word of warning – just in case you've forgotten – do not slow cook the kidney beans.


Posh Chilli

Serves 4


500g diced steak

A glug of rapeseed oil

1 medium onion, finely chopped

2 cloves of roasted garlic paste or 2 cloves crushed

tsp = teaspoon

half tsp ground cumin

half tsp ground coriander

half tsp ground cinnamon


quarter to half tsp chilli powder (to taste, depends how much of a kick you like – I used a quarter tsp)


500g jar of passata

60ml sweet chilli sauce

390g can of red kidney beans, rinsed


optional extras :

150g small dice or sliced chorizo

sweet baby peppers, de-seeded and

finely sliced

Editor's Pick # 4: Hooked on cooking – the main event!

Editor's note: Now, this one is pulled from the archives, from 2016 no less! Supermarkets might offer you the convenience of picking up their pre-rolled meatballs, but they don't do it for free. Plus, if you take the extra time (not much!) to roll your own, you're guaranteed to come away with an idea for next time you make them. Change of seasoning? Different meat? Bigger? Smaller? The world is your lobster, so have a read, treat yourself and your loved ones and give it a go. Also not to be missed is the tomato sauce recipe which if you're making meatballs is essential - with a couple of extremely important pointers. Easy when you know how!


Ringing the changes, today's session will be cooking supper for tonight.

The recipe that follows is easy and makes really tasty meatballs, together with a tomato sauce. All you'll have to do later on is cook the spaghetti – can't be bad! As a rough guide 450g of minced meat will give you twelve meatballs, so if you've four students with 450g per two students, you'll have 24 meatballs in total – this is not an exact science since your students are new at this and the sizes may vary!


Meatballs


450g minced beef, pork or turkey


*salt and black pepper

*garlic – either 2 tsps of paste or 2 cloves, crushed

*mixed herbs or garlic Italian seasoning – a generous sprinkle

*half a tsp of chilli

*heaped tbsp of tomato paste

*1 egg


sprinkle of plain flour

Rapeseed or vegetable oil for shallow frying


Place the mince in a large mixing bowl then add the remaining ingredients marked *, mix well. At this point your mixture may be too wet. If it is, sprinkle a little plain flour over the mixture and fold in gently.

Use a teaspoon as a measure and heaped with mixture, roll it between your hands and set aside on a board. When the meatballs are ready, heat the oil in a large frying pan and fry on a low heat, gently and carefully shaking the pan to ensure they are evenly coloured – use tongs if you are accident prone! Seal the meatballs in batches - 8 at a time and then transfer to an oven-proof dish or foil tray ready for later – cool, cover and fridge.

When you are ready for supper later in the day place the dish or tray containing the meatballs in a pre-heated oven 180fan/200c/Gas 6 and complete the cooking for 20/30 minutes – this time will vary depending on the sizes of the meatball – ensure that they are properly cooked – cut a larger one in half to be sure. Whilst the meatballs are in the oven cook your spaghetti and warm up the tomato sauce.

It may be that your students won't be interested in the tomato sauce element – it depends on their attention span – but it's easy to do and takes no time at all – in fact the sauce will improve with “standing” so if it is the case that you are making the sauce you can make it the day before, cover and fridge - after all your students have supplied the main event!


Tomato Sauce


500g sieved tomatoes or the equivalent in cans of chopped tomatoes

1 medium/large onion, chopped finely

garlic clove or tsp of minced garlic

1tbsp olive oil

knob of butter

vegetable stock pot and 250ml of boiling water

oregano or garlic Italian seasoning

black pepper

1 tsp caster sugar


Melt the olive oil and butter in a saucepan, add the onion and fry gently until soft then add the garlic. Add the oregano or garlic Italian seasoning and black pepper. Then add your stock pot and boiling water so that it melts, add the tomatoes and sprinkle on the tsp of sugar. The sugar is meant to balance out the acidity that one sometimes gets with tomatoes. Simmer the sauce for about 20 minutes.

N.B. If you want to add extra depth you can add a tbsp of tomato paste. I would suggest that you taste your sauce before you simmer for 20 minutes. If you add paste then the simmering process will cook it out and its important that you do this - it tastes horrid if you don't. A lot depends on personal taste and how good your tomatoes are.

A Hungarian rhapsody

I'm sure it's no surprise that the “Hungarian” refers to goulash. This time of year when it's turning cold it's difficult not to get bored once you've exhausted all the old favourites.

Here's my latest thought, “zhuzhed” a little. These days goulash seems to be served with rice or, spatzle (a soft egg noodle). I'm an old fashioned kinda gal with certain dishes and goulash is one of them. I like to serve mine, as was done in the 70s, with new potatoes. The ultimate comfort food however you want to serve it – by the way don't forget the sour cream - stirring in or even a blob on top – optional of course.


Hungarian Goulash

Serves 4-6 depending on size of appetite

900g braising steak, diced

glug of rapeseed oil to seal the beef

1 large onion, chopped as finely as possible


*8 tbsp tomato ketchup

*2 tbsp Worcestershire sauce

*1 tbsp soft dark brown sugar

*2 tsps salt

*2 tsps Hungarian sweet paprika

*½ tsp mustard powder


300ml water

2 beef stock pots


1 tbsp cornflour mixed with 1 tbsp water


small tub of sour cream - optional


Use a large frying pan and seal the steak in the rapeseed oil – in small batches – if you overfill the pan you will finish up with grey steak and it will “stew” - not nice! Set the batches aside in the slow cooker. Soften the onion for 2 minutes and then add to the steak.

In a medium sized bowl mix together the ingredients marked *.

Using the same frying pan – and therefore any residual juices, add the water and the stock pots, bring to the boil and stir until the pots have melted. Add the mixed ingredients * and pour over the beef.

Cover and cook on low for 8 hours or until meat is tender.

At the end of the cooking time, using a slotted spoon, remove the steak from the gravy. Mix the cornflour with water and stir into goulash and cook on high to thicken.

Add the steak back into the thickened gravy and you're good to go.

The pie plan!

As you'd expect I'm cooking ahead – the steak and kidney was slow cooked on Thursday, cooled, bagged and fridged, ready to pull together.

To make life easier, here are the recipes for both pie fillings – first up :


Steak and Kidney Pie filling


1kg/2.2lbs braising steak or stewing steak, cubed

275g/10oz lambs kidneys, diced

glug of rapeseed or Canola oil

2 x Knorr beef stock pots

2 heaped tbsp tomato paste

2 cloves of roasted garlic or fresh crushed garlic

salt and black pepper


You'll need a pie dish measuring 23x23x5cms/9x9x2”


Brown and season the steak in a large frying pan, using a drop of rapeseed oil – do this in small batches – if you don't you'll get grey looking meat, it will take ages and it will stew. Using a slotted spoon pop the browned meat into the slow cooker. Toss the kidneys in a little plain flour then brown in the frying pan and add to the steak in the slow cooker.

Dissolve the stock pots, gently, in the residual pan juices, then add the tomato paste – make sure the paste is properly melted and “cooked out” - if you don't do this you'll have a bitter taste. Add a glug of water to the melted stock pots and the tomato paste, stir well to combine, repeat until your pan is two thirds full. Bring to the boil and then tip – carefully – into the slow cooker. The “gravy” should cover the steak and kidney – if it doesn't top it up with boiling water. Slow cook for on low for 4 hours. If your gravy is too thin – it's personal choice - add a little slaked cornflour and thicken to taste. If you decide to thicken the gravy then I'd take the steak and kidney out of the gravy before thickening. It might seem a bit of a faff but it's worth it – the meat won't break up.

Set the slow cooked steak and kidney aside and fridge until you're ready to roll.

More entertaining - Strog Part 2 – the day before and on the day

The day before you want to serve the Strog – not a huge workload - take both bags of meat and gravy out of the freezer and fridge to allow them to defrost properly.

Before I begin, a practical tip. My slow cooker can be used on the hob i.e. it's separate from the base. If yours can't then you'll need a large saucepan. As a guide 23x12 cms – 9x4½” in old money.

Tip the contents of the gravy bag – carefully – into the cooker or the pan. Using a large frying pan melt 50g of unsalted butter, add the quartered mushrooms and season with salt and black pepper, sauté gently. The mushrooms will release liquid – continue to cook gently and the liquid will be absorbed, leaving slightly browned mushrooms.

Another tip. If I'm adding cornflour to thicken a gravy I mix it separately in a small jug or cup – with this dish you can use some of the cold gravy or a drop of cold water.

Back to the mushrooms. Add a couple of ladles of gravy from the cooker or the pan and heat gently until simmering, you can then gradually add the cornflour, stirring until smooth and thickened.

Yet another tip – when you're about to add the soured cream add some of the cold gravy before incorporating and whisk together. This will prevent white specks appearing – now is not the time to spoil the appearance of the Strog!

Warm the gravy in the slow cooker or saucepan and then add the thickened mushrooms and the soured cream loosened with the gravy.

All that remains is to add the slow cooked steak to the mushrooms, cream and gravy. Simmer very gently for 20 minutes until piping hot – resist the urge to stir, you'll break up the steak. A gentle jiggle will do the job. To “jiggle” is to give a quick light shake!

You can serve the Strog with whatever takes your fancy. As you know I chose mashed potato – it's not everyone's bag but for me it's the perfect combination. If you're not a fan, then tagliatelle is a popular choice or new potatoes, surprisingly rice is not top of the list but it's whatever your favourite gravy absorber is! It's personal – for me there's nothing quite like Strog ladled generously over a mini mountain of good mashed potato – cuts down on washing up too – you only need either a spoon or a fork to devour!

Then there's the dessert … a bowl of strawberries

Strog Part 1 Method

The reason I've split the recipe into two parts is simple – Part 1 can be slow cooked ahead and then frozen. Part 2 completing the dish is quick and easy – flawless cooking on the day!

Back to the method :


Using a large frying pan heat the rapeseed oil, season

and seal the strips of steak in batches until well browned

then, using a slotted spoon, set aside in the slow cooker


Using the oil and juices left in the pan sauté the onions

and garlic. Add the beef stock pots, mustard, tomato paste

and sweet paprika. Mix together and cook out for 2/3 minutes

so that the stock pots have melted and the tomato paste, mustard

and sweet paprika are combined. Add a glug of water and mix

thoroughly, meanwhile put the kettle on!


Gradually add more boiling water until the onions and

everything else are in a thick gravy. Tip the gravy over your

sealed steak, carefully, then top up with more boiling water so

that the steak et al is completely covered.


Slow cook for 4 hours

Now for the crucial part! When the slow cooking is complete set aside to cool. When cooled remove the the beef with a slotted spoon and place in a strong Ziploc bag, seal and place that bag in another – for safety's sake!

Carefully tip the gravy into another Ziploc bag and as above place that bag in another.

Place both the steak and the gravy bags in the freezer.
